Cowpoke Cookies

Cowpokes, Cowboys or Cowgirls — who doesn’t love a satisfying sweet treat?
Whether you’re working hard or hardly working, a little something special goes a long way. These cookies are crisp around the edges, soft and chewy in the middle, and packed with all the good stuff. And yes… chocolate chips are highly encouraged!
Ingredients
• 2 C all-purpose flour
• ½ tsp baking powder
• 1 tsp baking soda
• 1 C butter or shortening
• 1 C brown sugar
• 1 C white sugar
• 2 eggs
• 1 tsp vanilla
• 2 C oatmeal
• 2 C Rice Krispies
• 1 C shredded coconut
• Chocolate chips, optional (but I’m judging you if you don’t add them!)
Instructions
1. In a bowl, mix together the flour, baking powder and baking soda. Set aside.
2. In a separate bowl, cream the butter, brown sugar and white sugar until light and creamy.
3. Add the eggs and vanilla and mix well.
4. Gradually add the flour mixture to the butter mixture, mixing until well incorporated.
5. Stir in the oatmeal, Rice Krispies and coconut.
6. If you’re adding chocolate chips — and I strongly recommend that you do — fold them in until evenly distributed.
7. Roll the dough into small balls and place on a cookie sheet, leaving room for the cookies to spread.
Oven Method
Bake at 350°F (175°C) for approximately 10 minutes.
Bake a little longer if you prefer a crispier cookie. Personally, I’m judging you for that too, because there is nothing better than a soft, chewy cookie!
Cowboy Tip — Well, Cowgirl Tip!
Make the dough ahead of time and freeze it for a quick and easy treat.
Roll the dough into small balls and place them on a baking sheet. Freeze until firm, then transfer to a freezer bag or container. When the cookie craving strikes, simply pull out as many as you need and bake from frozen, adding a couple of extra minutes to the baking time.
Perfect for the trail, the tack room, the campfire — or sneaking one before anyone else knows they’re out!
